Blueberry muffins - yum
July 22nd 2008 23:46
Well, yesterday's blueberry muffins, the second batch, worked. I logged off the internet when I started cooking them and didn't log on again until they were really truly out of the oven and cooling!
I can't believe I did that yesterday! I think my husband is getting worried I might burn the house down - the dogs might be getting worried too - some of them are quite often inside if I'm home during the day.
Husband and son both took muffins in their lunchboxes today, and we all had a muffin each after tea last night. I'm quite happy with them - I'll freeze what's left and they'll be a handy lunchbox or snack item for the rest of the week at least.
What was in the muffins? Blueberries (a cup), chopped cashews and macadamias (about a tablespoon), too much sugar from my point of view and probably not enough from my son's, 2 cups of plain flour, 3 teaspoons of baking powder, some cinnamon, an amount of milk (maybe a cup), and there may be something else, I can't remember. That's the problem with being a creative cook - you get inspired and forget to write it down.
Those black muffins from Hell are now scattered in holes around the dog run. A bit later on today I'll put La De out there and see if he has fun finding them all. At least his digging will give him some sort of a reward!
