Banana and Walnut, with Orange Essence

Yesterday I made muffins again – possibly my best ever, although my husband hasn’t had a try yet – I’ll wait and see what he thinks. So light and airy, with subtle fruit flavours – banana with walnuts and orange essence. A little bit exotic with the orange taste, and yummy with it! These muffins fit into my lifestyle program because I stick to the ‘All Things in Moderation’ principle, except for Melbourne Cup day with my four desserts! I’ve mentioned how nice the banana cake was before haven’t I?
With any luck Chris will keep out of my freezer this time and not steal them – I’m watching you Chris. If you’re that keen on sweet things, why not try making your own muffins!
With the current Global Economic Situation (GES) maybe buying muffins may be out for a while. But maybe that’s the wrong way to look at it. We are doing good for the GES if we spend, aren’t we? Maybe the right way to go is to scrimp and save a little and go out and buy those muffins (not on credit- credit has a lot to do with the GES as far as I can make out!
I say, Make muffins at home - much cheaper and still yummy!
If you've ever tried making muffins and they turn out to be heavy and leathery, not light and fluffy, it probably means you are stirring the mix too much. The key to light and fluffy muffins is a light touch - only stir (gently) until the ingredients are mixed, and only until that - it doesn't matter if it isn't all completely mixed together, it does matter if the muffins are heavy, not light!
I know - I've had muffin failures, but now I use a light hand, the failures are the fiery failures, not muffins like house bricks! And I haven't burnt a batch of muffins for weeks now, I hope I've learnt my lesson - I'd hate to burn the house down, and not have yummy muffins to make up for it!
So Chris, I opted for sweet muffins, becuse I had an almost past it banana, and because I hadn't heard back from you, you naughty thief!
