Health muffins

Would you believe I'm writing about muffins again!?
I made a new batch of muffins on Thursday, and they are so nice, and so healthy. I put in the usual flour (wholemeal), sugar, baking powder, milk, egg, olive oil. I added nectarines I'd poached, frozen and defrosted, and some dried fruit and nut mix I keep in the freezer for snacking on.
Carefully mixed together, into the muffin pan, 15 or so minutes, perfection! I took two muffins to my mother's place yesterday to share when I visited. The muffins came from Mum's nectarine tree, and I was using up the last of them that I had poached in a sweet syrup and put in the freezer.
Mum enjoyed her muffin, I enjoyed mine, and now I know there is something healthy for me to snack on, whenever I'm a little peckish. I take one out of the freezer, 30 seconds or so in the microwave and bingo, healthy yummers!

Hi Carolyn,
I think you sell yourself short and underestimate the effect your posts about muffins have on the broader community. Personally, I have had a hard time dealing with the seemingly never-ending gap since your last muffin post.
We want more!

The next batch will be savoury ones, because that's what my husband said he wanted last time, but I made sweet ones instead. My son and I both wanted sweet muffins. Jake because he's a kid, and me because I wanted to use up the nectarines.
So next time, there'll be cheese, spring onions, herbs and who knows what, probably tomatoes. Yum.
