Tea last night - quick, tasty, healthy

What did we have for tea last night? Well it ws an old standby for us - mini pizzas. We had rag ends of sliced meats that needed eating or else they'd have been chomped up by the dogs.
We also had lots of mushrooms, and our mini pizza base of choice - a packet of English muffins. I defrosted the english muffins, then cooked the mushrooms in the microwave and sliced up the bits of meat.
My husband had cooked two sausages but only had one for lunch, so I cut the remaining sausage up into small bits. If I'd had a capsicum that would have gone in with the mushrooms, but I had none.
Then once everything was ready to go on top of the muffins, I put BBQ sauce on them and piled on the bits and pieces. I finished it all off with some cheddar cheese and put it in the oven for about fifteen minutes.
Out of the oven, onto the plates and the call to husband and son - 'Teas ready!'
It went down well, I gave my last muffin-pizza to my son, because I wasn't that hungry, and he's a growing boy, always hungry.
So that was tea, simple and as versatile as the content of your fridge and pantry. I've often put sliced tomatoes on too, and baby spinach. Basil often goes on top, and other herbs that appeal to me at the time. Leftover chicken is lovely on these mini pizzas too. It's all up to you - let your imagine go wild!
Tonight husband and I are going to dinner at a meeting for a group my husband is secretary for. There's a guest speaker, and I imagine there will be lots of vegetables with dinner, and perhaps roast meat. I know it will be tasty - the ladies who cater for the group are all good at the tasty and plain meals of the country dwellers.
My son is off on a school camp today, back on Wednesday afternoon. He's looking forward to lots and lots of food, and heaps of watersports too. When I saw the list of what they were having to eat, I wanted to go too - I don't want to do the water sports though!
