Mmmmm Muffins, Sweet, Sweet Muffins

Well, I did it, just like I said I would. Sweet mufins again, and so, so nice.

Wholemeal flour again, olive oil, milk, egg (duck), baking powder, nutmeg, salt (tiny bit), poached pear chopped up finely, chopped dates, and whatever it is I may have forgotten. I made a dozen and there are now nine left.

I'll put them in the freezer soon, and have one a day for a while. My son is away at the moment, so I'm hoping they'll last until he gets back from Canberra on Saturday. they are very yummy though. I just love my muffins when they work well, like this batch have.

The secret with muffins is to go very very easy with the mixing. gentle as anything does it. Rough handling toughens the muffins. My muffins this time are so soft, amazing, like a baby chick's down.


Got to go, the heater demands I go stand next to it for a while. Have to defrost my fingers.

Mmm...pears work well too and a nice change to bananas

I previously made a pear and ginger cake with almonds -- the ginger gave it a nice zing. I'll try your idea with chopped dates, I think.

Chopped dates are so yummy and sweet. Fibre too, and they are a fruit, which we all need to eat to help get healthy.

I'm almost all trained up as a Community Foodie, and I am going to be let loose on my community once I have my certificate - look out! No, just joking, I will work hard not to be a food nazi.

Morgan, I'm glad you asked!
I will do a post on it here, with a link to my blog where I've written about it.
It's a volunteer thing for the community, but could actually lead to something more eventually.
